Soya and Green Peas Cutlet

Ingredients: Soya granules, boiled green peas, whole wheat bread, boiled potatoes, chopped and blanched spinach, chopped onions, grated carrot, chopped coriander, chopped green chillies, ginger paste, dry mango powder, turmeric powder, garam masala, salt, olive oil

Step 1: Blend the whole wheat slices in a mixture to a coarse powder

Step 2: Soak the soya granules in 1 cup of water for 10 to 15 minutes. Drain well, squeeze out all the water and keep aside Step 3: Combine all the remaining ingredients, including the coarsely powdered whole wheat bread and soya granules in a deep bowl and mix well

Step 4: Make round cutlets out of the mixture

Step 5: Take a non-stick pan and grease it with oil

Step 6: Cook the cutlets on both sides till they turn golden brown

Step 7: Serve hot with ketchup Recipe

Stir Fried Water Chestnuts

Ingredients: Water chestnuts, olive oil, chilli flakes, chopped garlics, salt, black pepper

Step 1: Heat olive oil in a pan and add the water chestnuts and chilli flakes to it

Step 2: Sauté for 2-3 minutes

Step 3: Add garlic, salt and pepper

Step 4: Cook for another 2-3 minutes

Step 5: Serve hot

Pudina Gobhi

Ingredients: Boiled cauliflower florets, olive oil, salt. For the Pudina paste – chopped mint leaves, chopped coriander, chopped green chillies, grated fresh coconut, sugar, lemon juice, salt

Step 1: Heat the olive oil in a pan and add the cauliflower florets to it. Add salt to it, and sauté for about a minute

Step 2: Add the Pudina paste and cook for one minute

Step 3: Serve hot

Healthy Momos

Ingredients: Whole wheat flour, blanched and finely chopped broccoli, chopped bean sprouts, adrak paste, green chilli paste, chopped garlic, sugar

Step 1: Knead the soft dough out of the whole wheat flour. Add salt to it while kneading

Step 2: Combine the broccoli, bean sprouts, ginger paste, green chilli paste, garlic, sugar and salt in a bowl and mix well. Keep the stuffing aside

Step 3: Roll out a small portion of the dough into a circle

Step 4: Add the mixture to it

Step 5: Fold over to make a semi-circle and press the edges tightly

Step 6: Bring both the corners of the semi-circle and pinch them together

Step 7: Repeat Step 3-6 to make more momos

Step 8: Steam the momos in a steamer for 10 minutes

Step 9: Serve hot with chutney

Broccoli Tikki

Ingredients: Chopped broccoli, olive oil, chopped onions, chopped garlic, chopped green chillies, mashed potatoes, cornflour, paneer, cheese

Step 1: Heat oil in a pan and add chopped onions to it and sauté for a minute

Step 2: Add garlic and green chillies. Sauté the mixture for another 4-5 minutes

Step 3: Add broccoli and salt, sauté the mixture for another 4-5 minutes

Step 4: Remove the mixture from the flame and allow it to cool completely

Step 5: Once cool, add potatoes and cornflour to it. Mix well. Step 6: Shape each Tikki into round flats

Step 7: Press a little in the centre of each round, to make a depression

Step 8: Place a little paneer and cheese at the centre of each round, and roll it into a Tikki again

Step 9: Grease the pan with oil and cook the Tikki on both sides till it turns golden-brown

Step 10: Serve hot with tomato ketchup

 

Mooli Dumplings

Ingredients: chopped mooli leaves, besan, whole wheat flour, Dahi, hing, chopped green chillies, sugar, oil, salt

Step 1: Combine all the ingredients in a bowl and mix well

Step 2: Place spoonful of the mixture in a greased thali, and steam in a steamer for about 10 minutes

Step 3: Serve hot with ketchup

 

Sizzling Pineapple Satay

Ingredients: Pineapple cubes, olive oil, sugar, salt, cumin seeds, chilli powder

Step 1: Heat oil in a pan and add the pineapple pieces to it and sauté for 3-4 minutes

Step 2: Add the masala mixture to it and sauté for another 3-4 minutes

Step 3: Pierce a toothpick into each pineapple cube and enjoy the meal

Baby Corn Pudina

Ingredients: Chopped mint leaves, chopped coriander, sliced onions, lemon juice, sugar, green chillies, baby corn, cornflour, salt, sliced onions, lemon wedges

Step 1: Blend the mint leaves, coriander, onions, lemon juice, sugar and green chillies into a smooth mixture by adding little water to it

Step 2: Boil the baby corn in salt water till they become cooked

Step 3: Combine the baby corn with the prepared chutney, toss well and keep aside for ten minutes

Step 4: Heat oil in a pan, and sauté the marinated baby corn in it

Step 5: Add cornflour and salt to the sautéed mixture and sauté for another 3-4 minutes

Step 6: Serve hot

Spinach Stuffed Mushrooms

Ingredients: Fresh Mushrooms, olive oil, chopped spinach, whole wheat flour, low-fat milk, chopped onions, chopped green chillies

Step 1: Combine the whole wheat flour and milk in a small bowl, mix well and keep aside

Step 2: Heat oil in a pan, add onions and green chilli to it. Sauté the mixture

Step 3: Add spinach and salt. Mix and cook for ten minutes

Step 4: Add wheat flour-milk mixture to it. Mix well and cook till the mixture thickens

Step 5: Keep the mixture aside

Step 6: Remove the mushroom stems and for a cavity in each of the mushroom caps

Step 7: Stuff each mushroom cap with a portion of spinach filling

Step 8: Heat oil in a pan and place the stuffed mushrooms on it in such a manner that they face upwards

Step 9: Cover the lid of the pan and cook for 5-7 minutes

Step 10: Serve hot

Khakra Chaat

Ingredients: Coarsely crushed whole wheat khakras, chopped garlic, chopped green chillies, chopped onions, chopped coriander, boiled green peas, chilli powder, salt, lemon juice

Step 1: Heat oil in a pan. Add garlic, green chilli, and onion to it. Sauté the mixture for a minute

Step 2: Add tomatoes, green peas, chilli powder and salt. Mix well and cook on a medium flame for a minute. Stir occasionally

Step 3: Add coriander and lemon juice to the mixture. Keep aside

Step 4: Just before serving, combine the coarsely crushed khakra to the mixture and toss well
